Ingredients

  • 340g plain flour

  • 1 heaped tsp bread soda, sieved

  • 1 tsp powdered sea salt

  • 2 tsp ground cinnamon

  • 290ml buttermilk

  • 100g sultanas

Method

  1. Preheat the oven to 200°C and line a flat baking tray with parchment.

  2. Stir the flour, bread soda, sea salt and cinnamon together until completely combined. Make a well in the centre and add the buttermilk. Bring it together to form a dough and knead in the sultanas.

  3. Form the dough into a round, slightly flattened shape and place it on the prepared baking tray. Cut a cross in the top and pierce each of the four corners.

  4. Bake for 35 minutes or until it is baked through and sounds hollow when you tap the base. Allow to cool on a wire rack.
