Ingredients

  • 300g self-raising flour

  • 80g cocoa powder

  • 1 tsp baking powder

  • 280g muscovado sugar

  • 200g butter, softened

  • 2 eggs, lightly beaten

  • 200g chocolate chips

  • 1 tsp sea salt

Method

  1. Line a baking tray with parchment and heat your oven to 180°C.

  2. Sieve the flour, cocoa powder and baking powder together and set aside.

  3. Cream the sugar and butter until it becomes pale and fluffy. Slowly add in the eggs until combined. If the mixture begins to separate add a spoon or two of the flour mixture while adding the eggs. This will help it combine smoothly.

  4. Stir the flour mixture into the batter and when completely mixed add the chocolate chips.

  5. You should get about 16 cookies from the mixture. Place a generous soupspoon- sized blob of the batter onto the tray and repeat 16 times. Sprinkle with the sea salt and bake for 12 minutes. Allow to cool on the tray for 10 minutes and then transfer to a wire rack.
