  • 100g almonds

  • 50g ground almonds

  • 240g golden caster sugar

  • 200g plain flour

  • 2 tsp baking powder, sieved

  • 200g butter, melted

  • zest of 2 oranges

  • 2 tbsp olive oil

  • 150g natural yoghurt

  • 5 eggs, lightly beaten

  • To decorate:

  • 100g apricot jam

  • 350g Mascarpone cheese

  • selection of fresh berries
