40g (1 1/2oz) butter
100g (3 1/2oz) rice pudding
75g (3oz) caster sugar
1 litre (1 3/4 pints) whole milk
150ml (5fl oz) cream
1 teaspoon vanilla extract or 1/2 vanilla pod, split lengthways
Pinch salt
Plenty of freshly grated nutmeg
