Treacle Oat Biscuits
There are lots of warming spices in the biscuits, perfect for a cold, damp evening.

Ingredients
210g of plain flour
1 tsp of bread soda, sieved
50g of porridge oats
½ tsp of ground cinnamon
1 tsp of ground ginger
50g of treacle
180g of muscovado sugar
125g of melted butter
1 egg, lightly beaten
2 tsp of golden caster sugar for sprinkling
Method
Mix the flour, bread soda, porridge and spices until combined and set aside.
Mix the treacle, melted butter and muscovado sugar then stir in the egg. Stir in the flour mixture and bring everything together with your hands to form a ball of dough. Wrap this in parchment and place it into the fridge for at least an hour or two.
Preheat your oven to 180 degrees and line two large flat baking sheets with parchment.
Divide the dough into 16 balls and flatten each one, placing them on the prepared baking tray. Sprinkle with a little of the golden caster sugar and bake for about 15 minutes. Once cool enough to handle gently place onto a wire rack to cool completely.
