Oysters with Asian vinaigrette
I love oysters au nature just with a squirt of lemon juice but this dressing really adds excitement

24 Pacific oysters
1 clove garlic, crushed
1 teaspoon fresh ginger, grated
2 tablespoons rice wine vinegar
2 tablespoons mirin
2 tablespoons soy sauce
4 spring onions, cut at an angle
1 teaspoon red chilli, cut at an angle
3 tablespoons sesame oil
6 tablespoons extra virgin olive oil
1 tablespoon finely chopped chives
To serve:
fresh seaweed (if available)
segments of lime
