Sambal oelek mayo

Ingredients

  • 300ml (10fl oz)  mayonnaise

  • 2 tbsp sambal oelek

  • ½ tbsp of rice vinegar or best white wine vinegar

  • flaky sea salt

  • coriander sprigs

Method

  1. Mix the mayonnaise with the sambal oelek and vinegar to taste. Add a little flaky sea salt if necessary.

  2. Use as you fancy. Store covered in the fridge for 8-10 days or more.
