Ingredients

  • 6 pork chops

  • 1 tbsp fennel seeds, crushed

  • olive oil

  • sea salt

  • pepper

  • 285g fresh green gooseberries

  • 175ml stock syrup (to cover)

  • butter 

Method

  1. Top and tail the gooseberries, put into a stainless steel saucepan, barely cover with stock syrup, bring to the boil and simmer until the fruit bursts.

  2. Taste. Optionally stir in a small knob of butter.

  3. Trim the chops of excess fat, score the back fat and crush the fennel seeds.

  4. Choose a flat dish large enough to take the chops in a single layer, brush with olive oil and sprinkle with some crushed fennel seeds.

  5. Season the chops on both sides with freshly ground pepper, place on top of the fennel, sprinkle some more crushed fennel seeds on top and drizzle with olive oil, marinate for 1 hour or more.

  6. Brush off excess oil, season well with sea salt.

  7. Grill on a pan grill until cooked through.
