Ingredients

  • 175g butter, softened

  • zest of 4 limes

  • 165g caster sugar

  • 125g gluten-free flour

  • 2 tsp baking powder

  • 4 eggs

  • 50g desiccated coconut

  • For the drizzle:

  • 75g icing sugar

  • 100ml fresh lime juice

  • For the buttercream:

  • 110g butter, softened 

  • 170g icing sugar

  • 10ml lime juice

  • zest of 2 limes and more to decorate
