Cauliflower Fritters - Phoolkopir bhaja

Ingredients

  • 150g flour

  • ½ tsp chilli powder

  • 1 tsp turmeric powder

  • 1 tsp cumin seeds

  • ½ tsp ajowan seeds

  • Salt

  • Sunflower oil for deep-frying

  • 300g cauliflower, cut into medium-sized florettes

Method

  1. Make a thick batter of all the ingredients to the consistency of a thick custard.

  2. Heat the oil in a deep kadhai or frying pan until it is nearly smoking.

  3. Dip each cauliflower floret in the batter and gently add to the hot oil. Reduce the heat to allow the cauliflower to cook through for about two minutes. Do this in batches, a few at a time, frying until golden, then drain on absorbent paper.

  4. Serve hot with Pineapple Chutney or tomato ketchup.
