Ingredients

  • 2 tbsp rapeseed oil

  • 2 garlic cloves, crushed

  • 100ml maple syrup

  • 1 tbsp wholegrain mustard

  • 1 tbsp cider vinegar

  • 1 tbsp light soya sauce

  • small bunch of thyme, removed from the stalk

  • 1 tsp chilli flakes

  • 1½ kg chicken wings

  • green leaves for 4

  • 1 tbsp dressing

  • 2 tbsp Sriracha sauce or any other hot chilli sauce

Method

  1. Blitz the oil, garlic, syrup, mustard, vinegar, soya sauce and chilli flakes to make a sauce. Toss the chicken wings in the sauce so they are all coated.

  2. Set them aside in the fridge for about half an hour.

  3. Place the wings onto a lined baking tray and pour any of the sauce over them.

  4. Bake in an oven heated to 200°C for 40 minutes until they are nice and golden.

  5. Toss them twice during cooking so they cook evenly.

  6. Dress your salad and serve on the side with some of the tasty Sriracha sauce.
