  • 150-200g chanterelle mushrooms

  • 75ml rapeseed oil

  • 1 garlic clove, crushed

  • 40ml sherry

  • 1 tsp sugar

  • 2 sprigs of thyme

  • 40ml sherry vinegar (rice or white wine vinegar also work)

  • sea salt

  • freshly ground black pepper
