Ingredients

  • 110g plain white flour

  • 110g suet

  • 110g breadcrumbs

  • 110g sugar

  • 1 tsp baking powder

  • 1 egg

  • For the sauce:

  • 2Ā tbspĀ water

  • 450g homemade Seville marmalade

  • juice of 2-3 lemons

  • To serve:

  • softly whipped cream

Method

  1. Mix the dry ingredients together.

  2. Add beaten egg, marmalade and a little milk to moisten if necessary (the mixture should have the consistency of plum pudding.) Fill into a pudding bowl. Cover with a double sheet of greaseproof paper with a pleat in the centre. Tie firmly and steam in a covered saucepan for 2-3 hours. Check regularly and top up with hot water if necessary (the water level should be 3/4 ways up the bowl).

  3. To make the sauce, put the water and marmalade into a saucepan. Warm gently and boil 2-3 minutes. Add the lemon juice.Ā 

  4. When the pudding is fully cooked, turn it out onto a hot plate. Spoon some sauce over and around the puddings.

  5. Serve on very hot plates with lots of softly whipped cream and the remaining sauce.
