4.5 litres water
1-2Â tbsp salt
450g spaghetti
4 tbsp extra virgin olive oil
200g thick-sliced smoked streaky bacon or pancetta, cut into strips 1 cm wide
½ tsp freshly ground black pepper
3-4 eggs, lightly beaten
2 tbsp crème fraiche
1-2 tbsp parsley, chopped
90g freshly grated Parmesan
1-2 tbsp flat parsley, freshly chopped
