Ingredients

  • 4.5 litres water

  • 1-2 tbsp salt

  • 450g spaghetti

  • 4 tbsp extra virgin olive oil

  • 200g thick-sliced smoked streaky bacon or pancetta, cut into strips 1 cm wide

  • ½ tsp freshly ground black pepper

  • 3-4 eggs, lightly beaten

  • 2 tbsp crème fraiche

  • 1-2 tbsp parsley, chopped

  • 90g freshly grated Parmesan

  • 1-2 tbsp flat parsley, freshly chopped
