1 sheet (approx. 375g) Roll It All Irish Butter Plain Shortcrust Pastry, or similar
100g ground almonds
100g butter, softened
100g caster sugar
1 medium free-range egg
Splash of Amaretto
300g pickled sour cherries
150g Cherry Orchard Strawberries
2 tbsp caster sugar
1 tbsp plain flour
1/2 tsp cornflour
1 medium free-range egg, beaten (for egg wash)
1 tbsp demerara sugar (for sprinkling)
Handful of flaked almonds (for scattering)
