1 egg, lightly beaten
2 tbsp of lemon juice
1 tsp of vanilla essence
500g of plain flour
½ tsp of caraway seeds
1 tsp of baking powder, sieved
For the filling:
3 tbsp of cream cheese
2 tbsp of lemon curd
1 ½ tbsp of icing sugar
