Method

  1. Blitz the butter, anchovies, garlic, parsley and chilli flakes until they form a smooth paste.

  2. Toss the mushrooms in the paste and place into a saucepan over a medium heat. Cook until the mushrooms have softened.

  3. Spoon over the toast and sprinkle with the cheese and some cracked black pepper.

  • 2 tbsp butter

  • 4 anchovies

  • 2 garlic cloves

  • small bunch of parsley, chopped

  • ½ tsp chilli flakes

  • 400g mushrooms

  • 8 slices of crunchy bread, toasted

  • 100g Cheddar, roughly grated
