Mushrooms on toast with anchovy butter

Method
Blitz the butter, anchovies, garlic, parsley and chilli flakes until they form a smooth paste.
Toss the mushrooms in the paste and place into a saucepan over a medium heat. Cook until the mushrooms have softened.
Spoon over the toast and sprinkle with the cheese and some cracked black pepper.

4 anchovies
2 garlic cloves
small bunch of parsley, chopped
½ tsp chilli flakes
400g mushrooms
8 slices of crunchy bread, toasted
100g Cheddar, roughly grated
