  • 250g butter, softened

  • zest of 3 oranges

  • 220g sugar

  • 3 eggs, separated

  • juice of ½ small orange

  • 150g ground almonds

  • 225g fine polenta

  • 1 tsp almond essence

  • For the orange syrup:

  • 120g sugar

  • zest of a lemon

  • juice of ½ orange

  • 80ml water

  • 2 tsp orange blossom water
