Almond and blueberry cake
This deliciously nutty cake incorporates fresh, juicy and vibrant blueberries for a summertime treat

Ingredients
140g butter, softened
140g ground almonds
130g golden caster sugar
2 eggs, lightly beaten
250g blueberries
1 tsp almond essence
Method
Line an 8 inch round tin with parchment and preheat your oven to 180°C.
Beat the butter, ground almonds, caster sugar and eggs until everything is combined.
Very gently stir in the blueberries and almond essence.
Scoop the mixture into your prepared tin and bake for about 50 minutes or until a skewer comes out of the cake (rather than blueberry) clean. Once cool enough to handle transfer onto a wire rack.
