Fried jumbo prawns with garlic and coriander
Ingredients
500g fresh jumbo prawns, or frozen and thawed (about 12 prawns)
100g plain flour
Salt and black pepper
125ml vegetable oil
1 tbsp lemon juice
5 garlic cloves, crushed
2 tbsp chopped coriander

Method
Peel the prawns, remove the black vein that runs along the back, then wash well.
Place the flour in a bowl with salt and pepper.
Add the prawns, coating them in the flour.
Heat the vegetable oil in a frying pan and fry the prawns, stirring occasionally, until cooked through — this will take about 10 minutes.
Drain the prawns and toss with the lemon juice, garlic and coriander.
Season with salt and pepper and serve immediately.
