Ingredients

  • 500g  fresh jumbo prawns, or frozen and thawed (about 12 prawns)

  • 100g  plain flour

  • Salt and black pepper

  • 125ml  vegetable oil

  • 1 tbsp lemon juice

  • 5 garlic cloves, crushed

  • 2 tbsp chopped coriander

Method

  1. Peel the prawns, remove the black vein that runs along the back, then wash well.

  2. Place the flour in a bowl with salt and pepper.

  3. Add the prawns, coating them in the flour.

  4. Heat the vegetable oil in a frying pan and fry the prawns, stirring occasionally, until cooked through — this will take about 10 minutes.

  5. Drain the prawns and toss with the lemon juice, garlic and coriander.

  6. Season with salt and pepper and serve immediately.
