Ingredients

  • For the batter:

  • 175g flour

  • a good pinch of salt

  • 1 dstsp caster sugar

  • 2 eggs and 1 or 2 egg yolks

  • 425ml milk (or for very crisp, light delicate pancakes, milk and water mixed)Ā 

  • 2 tbsp melted butter

  • For the orange butter:

  • 175g butter

  • 3 tsp finely grated orange rind

  • 200g icing sugar

  • 1Ā tbsp Grand Marnier (optional)

  • freshly squeezed juice of 5 orangesĀ
