Fried trout fillet

Ingredients
4 fresh trout
salt
freshly ground pepper
8g butter
175ml cream
2 tbsp fresh dill, finely chopped

Method
Gut the trout, fillet carefully, wash and dry well. Season with salt and freshly ground pepper. Melt the butter in a frying pan, fry the trout fillets flesh side down until golden brown. Turn over on to the skin side, add cream and freshly chopped dill.
Simmer gently for 3 or 4 minutes or until the trout is cooked. Taste the sauce to check the seasoning and serve immediately.
