  • 213ml milk

  • ½ tsp salt

  • 2 eggs

  • Oil or lard for baking tins

  • Muffin tins

  • 8 free-range eggs

  • 8-16 rashers

  • For the hollandaise sauce:

  • 2 egg yolks

  • 125g butter cut into dice

  • 1 dessertspoon of cold water

  • 1 tsp lemon juice
