Ingredients

  • For the dough:

  • 475g strong white flour

  • 7g quick active yeast

  • 25ml olive oil

  • 50ml lukewarm milk

  • 275ml lukewarm water

  • 2 tsp salt

  • 1 tsp sugar

  • For the sauce:

  • 300g cherry tomatoes

  • 1 tbsp tomato purĂ©e

  • 1 shallot

  • 1 garlic clove

  • a little olive oil

  • 1 tbsp honey

  • salt

  • pepper 

  • Toppings per individual pizza:

  • ½ pear, cored and thinly sliced

  • 75g chorizo, thinly sliced

  • 125g buffalo Mozzarella

  • 30g Cashel Blue cheese

  • dried chilli flakes

  • a few leaves of fresh basil
