  • 200g pearl barley

  • 2 shallots, sliced thinly

  • 250g mixed wild mushrooms such as chantarelle, oysters, cep, milkcaps and hedgehogs

  • 4 springs of fresh thyme

  • 1 garlic clove, crushed

  • 100g butter

  • 2 tbsp parsley, chopped

  • 1 tbsp tarragon, chopped

  • 1 tbsp chives

  • 50g Parmesan
