Ingredients

  • 1.35kg boned shoulder of lamb

  • ½ tbsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp freshly ground black pepper

  • generous pinch saffron

  • 50g unsalted butter

  • 2 onions, chopped

  • 2 garlic cloves, finely chopped

  • salt

  • 175 raisins, soaked in water and drained

  • 2 tbsp honey

  • 3 tbsp coriander, chopped 

  • 1 tbsp oil

  • 50g flaked almonds

  • fresh coriander leaves

  • natural yoghurt
