Wild garlic and lemon roasted chicken

Ingredients
1 organic chicken (1½ kg approximately)
250g wild garlic butter
100g wild garlic
2 lemons
salt
pepper
Method
Chop the wild garlic. Mix with the softened butter, add the juice of half a lemon.
Take the organic chicken, legs facing away from you, and place your hand in between the skin and flesh of the bird. Work your hand through the bird gently, trying not to rip the skin.
Put the butter and garlic into a piping bag and pipe the mix into the chicken under the skin. Slice the lemons and place some into the cavity of the chicken and the rest around the chicken. Season with salt and pepper.
Roast in a pre-heated oven around 180°C for about 1¼ - 1½ hours, depending on the size of the chicken.
