  • 1kg organic stewing beef, cut into 3cm cubes

  • 2 onions, sliced

  • 4 garlic cloves, crushed

  • 2 tbsp flour

  • 2 tbsp tomato purée

  • ½ tsp paprika

  • 1 tsp thyme leaves

  • 4 tbsp dry sherry

  • 250ml red wine

  • 250ml beef, chicken or vegetable stock
