110g chorizo sausage, sliced
1kg organic stewing beef, cut into 3cm cubes
2 onions, sliced
4 garlic cloves, crushed
2 tbsp flour
2 tbsp tomato purée
½ tsp paprika
1 tsp thyme leaves
4 tbsp dry sherry
250ml red wine
250ml beef, chicken or vegetable stock
