Ingredients

  • For the potato topping

  • 1.3kg potatoes

  • 110g butter

  • 30g cream

  • 2 egg yolks

  • For the filling

  • 400ml milk

  • 300g fish, diced into bite-sized chunks (such as hake, monkfish, pollock, cod)

  • 150g smoked fish, diced into bite sized chunks (such as haddock, coley or pollock)

  • 70g butter

  • 1 leek, diced

  • 2 cloves garlic, minced

  • 70g plain flour

  • 350ml fish stock

  • 1 tbsp Dijon mustard

  • 1 tbsp parsley, finely chopped

  • 1 tbsp dill, finely chopped

  • 1 lemon, zested
