  • 90g self raising flour, sieved

  • for the fruit compote:

  • 250g raspberries

  • 2 tsp honey

  • for the meringue:

  • 3 egg whites

  • 170g caster sugar

  • 1 tsp white malt vinegar

  • 450g vanilla ice cream
