  • 2-4 fillets of very fresh mackerel (allow 170g fish for main course, 85g for a starter)

  • seasoned flour

  • small knob of butter

  • For the parsley butter:

  • 55g butter

  • 4 tsp finely chopped parsley

  • a few drops of freshly squeezed lemon juice

  • segment of lemon, to garnish

  • parsley, to garnish
