  • 1 whole properly free-range chicken (about 1.5kg/ 3lb 5 oz)

  • 50–100g (2–3½oz) unsalted butter, softened

  • 6 rashers of unsmoked streaky bacon

  • 2 lemons, halved

  • 8 rosemary sprigs

  • 12 garlic cloves, left whole and unpeeled

  • 2 tablespoons olive oil

  • 300g (10 ½oz) chorizo, thickly sliced

  • 500g (1lb 2oz) small new potatoes, left whole

  • Cornish sea salt and freshly ground black pepper
