Ingredients
2 slices of Gallaghers Bakehouse Handcrafted Sourdough Wholemeal bread
4 good slices of leftover turkey breast
3 streaky bacon rashers
Softened butter
Tablespoon of mayonnaise
½ small onion or shallot, finely sliced
2 heaped teaspoons of cranberry sauce
1 tablespoons of leftover gravy
80g good Irish Cheddar such as Derg or Coolattin, thinly sliced

Method
Melt a little butter over a medium heat on a large frying pan and add the finely sliced onion with a very small pinch of salt.
Soften the onions for a few minutes and then add the 2 heaped teaspoons of cranberry sauce. Remove to a warm plate, wipe the pan and then fry the bacon on medium high until crispy. Remove the bacon to the same warm plate and set the pan aside.
Lightly butter the outside of both of the slices of Gallaghers Bakehouse Handcrafted Sourdough Wholemeal bread. On the inside of the bottom slice, spread the tablespoon of gravy and then add the slices of turkey with a small pinch of sea salt.
Next, add the cranberry onion mixture, the bacon, and finally the slices of cheddar. Spread the mayonnaise on the inside of the top slice of bread and close the sandwich over.
Place the pan back on a medium heat and fry the sandwich for three or four minutes each side so that the buttered outsides have turned crispy and brown, and the cheese has started to melt.
Remove from the pan to a chopping board, cut in half and devour.
