Ashura cereal
The gently spiced puffed millet and spelt version of this cereal is an indulgent favourite that will last weeks

Ingredients
100ml rapeseed oil
110g honey
110g soft dark brown sugar
1 tsp salt
1.5 tsp cinnamon
½ tsp ground cardamom
100g puffed spelt
100g puffed millet
40g sunflower seeds
50g pumpkin seeds
30g sesame seeds
85g almonds, very roughly chopped
Method
Prehat the oven to 190°C. Line a large baking tray with parchment paper and leave to the side.
Combine the puffed grains, seeds, nuts, spices and salt in a large mixing bowl.
In a small saucepan, combine the oil, honey and sugar on a high heat and bring to the boil. When the contents are bubbling, pour over the dry ingredients and mix with a wooden spoon until everything is well covered.
Transfer the contents to the prepared tray and flatten out in a single layer.
Bake in the oven for 10-15 minutes.
Remove from the oven and place somewhere to cool down before breaking into large clusters. Once the cereal is cold, transfer to an airtight container.
