Ingredients

  • For the dressing:

  • juice of 1 lemonĀ 

  • 2 tbsp of Dijon mustardĀ 

  • 1 shallot, very finely dicedĀ 

  • 1 garlic clove, crushedĀ 

  • sea salt

  • black pepperĀ 

  • 100ml olive oilĀ 

  • For the salad:

  • 2 big bunches of Kale (preferably Russian or Covolo nero)Ā 

  • 300g brussels spouts, trimmedĀ 

  • handful of almonds, skin on, roughly choppedĀ 

  • 100g Parmesan or pecorino, gratedĀ
