Kale and brussels sprout salad
Brussels sprouts are actually, wonderfully delicious when eaten thinly shredded and raw.

Ingredients
For the dressing:
juice of 1 lemonĀ
2 tbsp of Dijon mustardĀ
1 shallot, very finely dicedĀ
1 garlic clove, crushedĀ
sea salt
black pepperĀ
100ml olive oilĀ
For the salad:
2 big bunches of Kale (preferably Russian or Covolo nero)Ā
300g brussels spouts, trimmedĀ
handful of almonds, skin on, roughly choppedĀ
100g Parmesan or pecorino, gratedĀ
