Ingredients

  • 330g smoked mackerel fillet

  • Chipotle mayonnaise

  • 1 avocado, sliced

  • 4 tostadas

  • For the tomato salsa:

  • tomatoes, diced 

  • red onion, finely diced 

  • coriander 

  • salt

  • pepper

  • lime juice

  • green chillies, diced

  • olice oil 

Method

  1. Flake the smoked mackerel with a fork and mix into the fresh tomato salsa. Spread a little chipotle mayonnaise onto each tostada and topped with shredded lettuce.

  2. Spoon over the smoked mackerel salsa and top with a slice of avocado.

  3. For the tomato salsa, mix the tomatoes, red onion, coriander, salt, pepper, lime juice, green chillies and olive oil in a bowl and leave aside for half an hour for the flavours to infuse.
