Ingredients

  • 2 bagels of choice

  • 10 cherry tomatoes or 2 regular tomatoes

  • 1 tsp tomato purée

  • 1 garlic clove crushed

  • 20ml water

  • 1 tbsp olive oil

  • 80g grated cheddar or mozzarella

  • Some basil leaves to garnish

  • Salt and freshly ground pepper

  • Suggested toppings:

  • Peppers, finely chopped

  • Red onion, finely chopped

  • Mini pepperoni slices

Method

  1. To make the tomato sauce base, place the tomatoes, tomato purée, garlic and water into a small saucepan with 1 tablespoon of olive oil and bring to a simmer; allow to cook on low heat for a few minutes until the tomatoes soften.

  2. Press down on the tomatoes with a fork to create a chunky sauce, and season with salt and pepper; set aside.

  3. Separate the bagels and divide the tomato sauce between them, spreading some on top of each one.

  4. Sprinkle with the cheese and whatever other toppings you want to use.

  5. Drizzle the bagels with olive oil and bake for 10-12 minutes in a preheated oven at 180°C or air fry at 180°C for 6-7 minutes.

  6. Garnish with basil leaves before serving.
