Spiced flat fish with a red onion salad
This quick and easy supper incorporates flat fish, fresh herbs and juicy, fried tomatoes

Ingredients
4 flat fish fillets such as plaice, brill or sole
1 tsp pink or black peppercorns
1 tsp dried rosemary
3 tbsp rapeseed oil
1 tbsp lime juice
bunch of chives, finely chopped
bunch of parsley, finely chopped
1 small red onion, thinly sliced
3 tomatoes, diced
Method
Pound the paprika, garlic, peppercorn, rosemary and one tablespoon of oil with a pestle and mortar or blitz with a soup gun.
Rub the mixture on each fillet of fish. Whisk the lime juice with the remaining two tablespoons of rapeseed oil, the chives and parsley and some seasoning.
Stir the red onion and tomato in the dressing. Heat another drop of oil and fry the fish skin side down until it is starting to curl at the edges and brown underneath. Turn the fish and fry on the other side until cooked through. Serve with the salad and rice or potatoes if you wish.
