Peanut butter and sea salt cookies with dark chocolate chips
The perfect balance of salty and sweet, these cookies have a crunchy exterior and a soft, gently spiced interior filled with chocolate chips

Ingredients
110g butter
110g peanut butter
100g caster sugar
100g brown sugar
1 egg
2 tsp ground ginger
110g flour
2 level tsp baking powder
50g dark chocolate chips
a few generous pinches of sea salt
Method
Cover a baking tray with parchment and preheat your oven to 180°C.
Beat the butter, peanut butter, and both sugars until combined.
Slowly beat in the egg.
Sift the dry ingredients and beat them in as well. Stir in the chocolate chips.
Roll the dough into balls the size of a walnut and place apart on lined baking tray.
Press each one with a fork and sprinkle with some sea-salt. Bake for 12-15 minutes until golden.
