165g butter
80g demerara sugar, plus 1 tbsp for sprinkling
75ml treacle
225 wholewheat spelt flour
100g rye flour
1 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground allspice
pinch of sea salt
