  • 80g demerara sugar, plus 1 tbsp for sprinkling

  • 75ml treacle

  • 225 wholewheat spelt flour

  • 100g rye flour

  • 1 tsp ground cinnamon

  • 2 tsp ground ginger

  • 1 tsp ground allspice

  • pinch of sea salt
