Celeriac gratin with cheddar and chives
This deeply comforting gratin with strong cheddar cheese is delicious with refined and robust stems of celeriac

Ingredients
1Â medium celeriac, peeled and sliced
2 garlic cloves, crushed
25g butter
250ml double cream
200g strong mature cheddar, grated
sea salt
freshly-cracked black pepper
good handful of chives, finely chopped
pinch of freshly ground nutmeg
Method
Preheat the oven to 180°C.
Butter a medium-sized baking dish or casserole dish and set aside.
Mix the cream, crushed garlic and nutmeg together in a measuring jug and season.
Place as many slices of celeriac as will fit in a single layer on the bottom of the baking dish. Cover with grated cheese and pour over as much of the cream mixture as it takes to just about cover the layer. Repeat this process of layering until you have used up all the celeriac, cream and cheese. For the top layer, sprinkle over an extra bit of grated cheese. Cover the dish with tinfoil.
Bake for around 40 minutes, then remove the foil and leave in the oven for 35 more minutes until the top is golden and the cream is bubbling. Sticking a knife through should face no resistance from the celeriac. Cover generously with chopped chives and serve.
