  • 72 mussels

  • 2.5cm ginger, peeled and chopped

  • 8 garlic cloves, peeled

  • 110ml water

  • 4 tbsp vegetable oil

  • 200g onion, peeled and chopped

  • 1-2 fresh chilies, sliced into fine rounds

  • ½ tsp turmeric

  • 2 tsp ground cumin

  • 1½ tins of coconut milk

  • salt

  • fresh coriander leaves
