Chinese garlic chive omelette
This simple omelette combines the chopped leaves of Snowbells, an early wild garlic for a burst of flavour as well as chopped chives

Ingredients
5 eggs
40-50g Chinese or garlic chives or wild garlic
¼ tsp sesame oil
1 tsp fish sauce
½-1 tsp oyster sauce
1 tbsp olive oil or peanut oil
Soy sauce, optional side
Method
Slice the chives into 5mm pieces. Whisk the eggs together in a bowl with the other ingredients. Add the chopped chives and salt and freshly ground pepper to taste.
Heat a wok or a 25cm frying pan over a high heat. Add the oil and swirl to coat the base. Drop in a teaspoon-full of the mixture to test the seasoning.
Pour the egg mixture into the hot wok or pan, and swirl to coat the base evenly.
Cook for a couple of minutes to brown the base lightly. Flip over to cook the other side. When almost set after 2-3 minutes, slide out onto a hot serving plate. Divide into quarters sprinkle with garlic chive flowers and serve with soy sauce.
Alternatively make 2 smaller omelettes.
