  • 250g shop bought puff pastry 

  • 160g butter

  • 2 tsp sugar or honey

  • 1 tbsp cider vinegar

  • Rapeseed oil

  • Sea salt and black pepper 

  • Few sprigs of thyme

  • 2 large shallots, cut into wedges
