Lamb curry
This curry is punchy, spicy and vivid in colour - serve with some buttered basmati rice with coriander, some Naan bread and mango chutney

Ingredients
1kg lamb, diced
4 tbsp plain yoghurt, plus extra to serve
1 tsp ground turmeric
1 tsp ground cumin
2 tbsp vegetable oil
1 onion, peeled and sliced
3 garlic cloves, peeled and chopped finely
2cm piece of root ginger, peeled and chopped finely
6 small green chillies
1-2 tsp chilli flakes
400ml boiling water
2 chicken stock cubes
large handful of spinach leaves
4 tbsp coriander leaves, chopped
