Ingredients

  • 200g roasted red peppers

  • 2 plump cloves of garlic

  • 1 tsp good quality balsamic vinegar

  • ½ medium onion

  • 2 tbsp olive oil

  • 1 tsp red pepper flakes

  • 1 tsp flaky sea salt

  • 2 tins Italian cherry tomatoes

  • 3-4 sprigs of fresh basil

  • A piece of parmesan cheese rind

  • 50g grated parmesan cheese, plus more for serving

  • 4-6 eggs

  • Garlic bruschetta

  • Slices of lightly toasted baguette

  • ½ clove of garlic

  • Extra virgin olive oil

  • Flaky sea salt
