  • 1 lb (450g) tripe

  • 1 large onion, peeled and sliced

  • Salt and freshly ground pepper

  • Cold milk (full fat!) - sufficient to cover

  • Thyme

  • Bay leaf

  • Irish (English) Mustard – to taste

  • Corn flour or roux

  • Parsley – chopped

  • Drisheen – optional
