1 large onion, peeled and sliced
Salt and freshly ground pepper
Cold milk (full fat!) - sufficient to cover
Thyme
Bay leaf
Irish (English) Mustard – to taste
Corn flour or roux
Parsley – chopped
Drisheen – optional
