Ingredients

  • 4 medium sized aubergines

  • 1 onion

  • 2 tbsp freshly grated ginger

  • 6 cloves garlic

  • 200g minced pork

  • ½ red bell pepper

  • ½ tsp white pepper

  • 1 tsp flaky sea salt

  • 8 eggs

  • Salt and ground black pepper

  • For the tomato and chilli salad

  • 200g cherry tomatoes

  • 1-2 green chillies

  • ½ tsp flaky sea salt

  • Juice of a lime
