Ingredients

  • pasta for four

  • olive oil

  • 4 garlic cloves, finely chopped

  • 1 fresh chili, finely chopped

  • 2 small courgettes very thinly sliced

  • 600g prawns

  • sprinkling of paprika

Method

  1. Put the pasta on to boil in lightly salted water and drain when cooked.

  2. Fry up your garlic in some oil, add the chilli as the garlic is about to change colour.

  3. Add your courgette and fry for less than a minute. The courgette is sliced thin so it will not take long.

  4. Add the prawns to the pan, toss these in with your courgettes. Cook until they have all turned pink.

  5. Toss the pasta into the pan with the courgette and prawns.

  6. Season well then dress with a little drizzle of good olive oil and a sprinkling of paprika.
