Ingredients

  • 140g crab meat (mixed, white and brown crabmeat)

  • 175-250ml mayonnaise

  • ½ tsp finely grated onion

  • small lettuce leaves, cress or watercress

Method

  1. Mix the crab meat with 2-3 tbsp of mayonnaise and a little finely grated onion. Taste and season if necessary.

  2. Note: Sometimes if the crab meat is quite strong tasting we add a little French dressing as well as the mayonnaise. If the mixture is a little bland a pinch of mustard can bring up the flavour.
